Recipes - Frozen Lime Pie
Frozen Lime Pie
1/2 cup milk
8 tsp Spoonable or Supreme or 1 tsp Simply Stevia
2 tsp lime peel
1/4 cup lime juice
8 ounces cream cheese
1 baked crust (see below)
1 cup heavy cream
1/8 tsp Simply Stevia or 1/2 tsp Spoonable or Supreme
1 tsp vanilla extract
In a food processor, blend milk, stevia, lime peel and juice. Gradually add cream cheese. Blend until smooth. Pour into crust and freeze overnight.
Whip heavy cream with stevia and vanilla extract until stiff peaks form. Garnish pie with whipped cream.

2 1/2 ounces almonds
1/4 cup soy protein isolate
1/8 tsp Simply Stevia or 1 tsp Supreme or Spoonable stevia
2 tbsp butter
In a food processor, mince the almonds to a fine powder. Add soy protein and stevia. Mix well. In a small bowl, mix the powder with melted butter. Mix with fork until crumbly. In a pie pan, press almond mix into the bottom and up the sides of the pan. Bake at 350° F for about 8-10 minutes or until golden and crispy.
Makes 1 pie shell
